If you are a mezcalero, you should know that Michoacán has excellent quality mezcal varieties and organoleptic characteristics very different from those of other regions. Accompany them with cotija cheese that makes perfect harmony with the mezcal flavors of this state. Also ask for the michoacano rum, another gem of the place.
