This is Solar Roast has an amazing street-art mural on the east side of the building as well as a great children's play area, a fire place and super comfy seating. The name Solar Roast comes from how their coffee is roasted. All of the coffee is roasting by solar collectors on the roof of their downtown location in Pueblo.

Best mexican food and green chile in town!!! In my opinion. It's in a rough neighborhood, but has a great atmosphere, service and patio in the summer.

Home of the Pueblo slopper, an open-faced hamburger and smothered with Pueblo green chile. If you want to hang out with some locals and get a good feel of Pueblo's blue collar history Coors Tavern is a must-do. Tip: order your slopper on a bed of fries and skip the bun. It's cheaper and the fries are amazing!!!!

It's cheaper and the fries are amazing!!!!

Drinks & Nightlife

This is the best stocked bar for locally distilled spirits and Colorado micro-brews. It's a bit divey, but has great drink specials and knowledgeable bar staff. If you love gummy candy like I do, ask the bartender which gummy-infused candies they have on hand. The rummy-bears are my fave, but the whiskey-peach rings and tequilla frogs are good too.
