Make, cut, and boil buckwheat noodles in a traditional Japanese home.

First, we will introduce each other. I will explain about how to make delicious soba. I will give you my delicious soba recipes. Please put on aprons and also plastic gloves. We will start making soba dough. Making a good soba dough requires some skill. Amount of water may vary depend on the weather and season. After we finish making soba dough, we will cut the dough into noodles. We will boil it and cool it. We will enjoy it for lunch or dinner.

Japanese cuisine is recognized as intangible cultural heritage by UNESCO and there are many kinds of Japanese food but soba making is unique, traditional and loved by many nationalities.

Japanese have a spirit called "omotenashi". It's about providing heartwarming treatment and service. The culture of making buckwheat noodles in my own home and offering it to customers with sincerity is a representation of the true spirit of hospitality. A valuable experience which can not be enjoyed in the restaurant is possible in this workshop.

I’ve visited 30 countries and made friends all over the world. One of my passions is introducing Japanese culture and cuisine wherever I go, and I enjoy making delicious soba noodles for people.

After I started showing friends and family how to make soba, others heard about me through word of mouth. Now, I’ve been teaching classes for the last 5 years. When I’m not making soba, I run an IT firm and am assistant teacher for green tea ceremonies and Japanese calligraphy.

I have the qualifications of food sanitation management which is taken by restaurants in Japan. I pay close attention to hygiene management.

It will be held at my private home which is traditional old house where you can see the traditional way of living. Traditional old house became rare to find these days since there are many modern buildings in Tokyo.
Every house facility is all Japanese-style, there is a tea room where you can have a tea ceremony in the house. As it is near from Shinjuku, transportation is convenient, bus and subway trains frequently comes.

My husband and I had a wonderful time learning how to make soba noodles with Hide. He was an amazing host and he really took the time to show us how to do everything, from measuring the flour, to mixing in the water and then cutting the noodles. He even provided a print out of the recipe so we can make it at home together.

Hide was an amazing host! His home was very cosy and clean. He was very well organised and did an awesome job at explaining to us in English what soba making was about—the history, the ingredients... etc. We learnt some things that we never knew. Hide then prepared a meal for us paired with his homemade soba sauce and freshly fried tempura. His place was very accessible, in a quiet local neighbourhood not far from the centre of Tokyo. He also took a ton of pictures for us (as we were wearing gloves for hygiene purposes and busy making soba) and shared them in a link after the experience. Really appreciated that :-)

Being welcomed into Hide's home was so lovely, he told us about his love for soba, the health benefits and allowed us to do so much on our own with gentle guidance. Despite overrunning by 1 hour he never rushed me or looked stressed. He added drinks and served tempura with fruit dessert. Totally worth it!!

My boyfriend and I loved our soba noodle making experience! Hide’s house was easily accessible by public transit and he was very kind and patient in his demonstrations. He took lots of photos of us that we now have as mementos. The meal he cooked for us afterwards was delicious and we were totally stuffed. Would definitely recommend this experience for anyone looking for a few quiet hours away from the chaos of downtown Tokyo to make and eat soba noodles and learn about life in Japan.

We loved our time with Hide! He was very knowledgeable about his craft and gave simple instructions to follow. The meal was delicious and we enjoyed sitting with him while we ate.
