Food is not only my passion, it’s a tool I use in every part of my life.

My vision is to inspire people to work with nature and teach traditional cooking methods like fermentation, in order to help them reconnect and restore their health through the power of food.

Before the class, guests will be given a set of introductory notes and guidelines.

In the class, we will start by getting to know each other and find out why we are interested in learning more about traditional cooking.

Secondly, I will give some background information on gut health and why it is so important for your immune system.

Then, step by step we will prepare a basic Sauerkraut recipe and follow with a Kimchi recipe. Well, I should really call it Kimson because I took this classic Korean recipe and adapted it to my husband’s diet. Kimchi does have many health benefits but it also contains ingredients that would all contribute to his auto immune disorder. So, I removed the ingredients he couldn’t eat and replaced them with vegetables and spices which would enhance the probiotic value, help support the gut bacteria and therefore strengthen the immune system.

Finally, we will place the ferments in their jars, talk about storage, preservation and other tips.

Preparing food this way provides us with the correct balance of bacteria, and unlocks vital nutrients costing us little or no energy to digest.

I attended catering college for 3 years in England.
My passion for cooking led me to countries like Greece, Germany, Italy and Holland, where I continued to gain experience as a chef.
In 1998 I opened a vegan/macrobiotic restaurant in Amsterdam.

Shortly after, my husband was diagnosed with an autoimmune disease.
I have successfully treated his illness only with a healthy diet for the last 17 years, without any medical intervention.
This led me to deepen my knowledge in fermentation, natural remedies, cosmetics and cleaning products.
I am currently studying Holistic Nutrition.

I believe once you get involved into food preparation you begin to understand that what you put in your mouth (and on your skin) has a direct influence not only on what you feel but on how you think.

You will learn so much about food, people and life through this experience! I was inspired to take it after watching Michael Pollan's docuseries on nextflix called Cooked and I wanted to learn more about fermentation. For any of you who are Pollan fans this experience feels like a live interaction of his work. You think you are going to learn about one thing but with an open-mind and heart, you realize that you are getting a lesson on humanity through one of the things which connects us all- food. Even if you aren't interested in fermentations, I encourage you to take this courage and interact with Sonia. Your life will feel brighter and more hopeful after a few hours with her. I am hopeful she will do more experiences because she is so knowledgeable of a variety of topics. I can't believe my luck of getting a chance to meet her and experience her gifts!

My brother and I had to reschedule our fermentation class with Sonia on a rather short notice. Sonia did absolutely everything she could to postpone our meeting! She made a new Zoom account, asked her neighbour, made a skype account and used her sons computer! Thanks a million for all your effort! Sonia is such a happy person and was always making sure we were able to follow her steps. Would definitely recommend this experience. Raphael and I are really looking forward to taste our ferments and are looking forward to trying out new recipes.
