Co będziecie robić

We will begin by demystifying the science of kombucha brewing. You will learn how sweet tea transforms into kombucha via fermentation. After gaining an appreciation of the science, we then move on to preparing our own respective kombucha batch brews.

The size of your batch will depend on the amount of starter liquid you have (this will also dictate how much sugar you need to add). So even if all you have is a 1/4 cup of storebought plain kombucha, that's good enough to make a pint batch! The only prep required is to steep your tea and place water in the fridge. We will simultaneously add our tea, water, sugar, and starter, and cover our brew jars. After showing the changes you can expect to observe in your own brew, we will pay a visit to my SCOBY hotel and discuss how to prevent issues such mold, Kahm yeast and fruit flies.

At the end, I will demonstrate how to harvest a batch brew of finished kombucha and prepare for bottling and flavoring. I will show the appropriate bottles for safe carbonation, and how to safely open a bottle that has completed the second fermentation process. I will demonstrate with two styles of bottles and discuss different flavoring options.

After booking, I will ask about your starter amount and advise you on how much tea and sugar will be required to make your first kombucha batch brew. Instructional handouts will be provided after our session.

Norah was extremely accommodating and knowledgeable with the fermentation process of kombucha. She was organized and showed me step by step what I needed to do while answering all the questions I had. She knows her stuff and I look forward to joining some of her other fermentation classes. If you love kombucha this is a must workshop!

Norah is very knowledgeable! Her passion really came through. I have done many fermentation workshops with her including tempeh making, sauerkraut, kimchi and this one is Kombucha. I learned so much from her and she gives the full support in the process of fermenting at home (even after the class). Highly recommended!
