Co będziecie robić

Our classes are 3 hours long and consist of 2 hours of personalized cooking instruction during which we will learn the basic concepts of classic French cooking and prepare few staples of traditional French cuisine.
We'll start with a briefing about the concept of mise en place and organized cooking, we'll talk about the menu and how will we proceed in order to utilize our time in a seamless flow.
We'll go then through an important part of our class: knife safety, skills and techniques. We'll practice by preparing the base of our first course, a nicoise salad with fresh ahi tuna
We'll then proceed with the preparation of our main course: pork or chicken normandy with calvados and apples served with an individual ratatouille.
Then we'll dive into the simple yet refined procedure to craft our dessert, a tart tatin.

Finally for the last hour, our guests will sit down in our cozy dining room and will be served everything prepared together.
Other things to note
We suggest to dress up comfortably, arrive at least 15 minutes prior to the beginning of the class to get ready and have the time to set down and mingle with your fellow students.
Please make us aware of any dietary or religious restriction in advance, so we may be able to accommodate your needs.

I was raised in the coastal northern Italian city of Trieste, a stone throw of distance from Venice. At age 14 I started working in some of the busiest and best restaurants. First in Italy, on the Adriatic riviera and in the Dolomites, eventually expanding my horizons to work in Vienna, Bruxelles and finally landing over the pond in New York City in 1998. Since then, I worked in many bastions of Italian cuisine in the Big Apple and I've been featured many times in the New York Times, Esquire, the Michelin guide and I'm being recognized by my peers by being bestowed the title of Master Chef in Italian Cuisine by the Academia Barilla and featured in Best Chef America in 2012, 2014 and 2016. In 2016 I started my own cooking school Red Inside Culinary to pass on all my hard earned experience to anyone who loves food and life.

An amazing cooking experience with Ivan! The location is cozy and warm, the food was delicious, and the teaching was spectacular - even a little course of knife skills in the beginning. A lovely, unique evening learning how to cook!
