Co będziecie robić

You will have a behind the scenes experience with head chocolate makers Ben & Blanca where you will get to make and eat gourmet dark chocolate. Fine artisan chocolate like wine has an immense range of flavor profiles for every palate. Like wine it is a fruit and has to go through a number of processes during production, all which can affect flavor. In fact chocolate has a much broader flavor profile than wine. The 90-120 minute workshop starts with a brief discussion about everything chocolate where you will learn more about how the chocolate we make is helping to preserve the Osa Peninsula rainforest and what makes it truly unique. Next we will roast & winnow cacao beans and then load the melangers where it gets stone ground into fine chocolate (less than 20 microns). You'll then work alongside us while we temper and pour into bar molds building your own flavor bar by adding inclusions like toasted almonds, garnishes like sea salt or fillings like mangosteen caramel... While the bars cool for packaging we will have a chocolate tasting where you will learn valuable etiquette on how to properly taste gourmet chocolate.

I co-founded and run a non-profit called CocoaEthika on the Osa Peninsula. I am a jungle alchemist who makes tree to bar gourmet chocolate as well as other creations from the endless exotic fruits found in the local area. I work with some of the best cacao in the world grown in the most biologically intense area on the planet. I am passionate about chocolate and sharing this knowledge with others.

CocoaEthika's new location for the chocolate lab has just landed at the "old school" a couple hundred meters from the BM Grocery store downtown and is not yet open to the public. CocoaEthika's cacao harvest is stored there as is where it is stone-ground into dark chocolate. You'll join us on one of the few days a week we're there manufacturing for the local Friday "Martinas Market" where I temper and package our fresh chocolate.
